Hello, everyone! My name’s Eva-Joy, and my mom asked me to guest post today and share my THM hot chocolate recipe with her followers. I got the original recipe off of Pinterest, but I’ve tweaked it so much that it hardly resembles the original anymore – I’m a huge hot chocolate fan, so it took some experimenting to get the drink exactly the way I like it. But now that I’ve played around with the recipe a bit, I can easily say that this hot chocolate is just as good as anything you could get at Starbucks or the packets from the grocery store. And, as a bonus, it’s a Fuel Pull, which means you can have it anytime you want, and still stay totally on the THM plan. This hot chocolate is probably my favorite THM recipe, and I can’t wait to share it with you. Enjoy!
There are only three ingredients (not counting the Reddi-whip which is optional – I’ve drunk this hot chocolate both with and without whipped cream, and it’s excellent both ways). Almond milk, cocoa powder, and xylitol. All three are staples in my family’s home, which makes this hot chocolate doubly easy to make. If you’re on the THM diet, you probably have these ingredients as well. If you don’t like almond milk, don’t worry; the almond taste it very faint. I hardly notice it.
I mix in the three ingredients well (1 1/2 cup of almond milk, 2 tbsp. of cocoa, and 4 packets of xylitol), making sure everything is blended together. Keeping the hot chocolate on medium heat usually has it nicely warmed up in about five minutes. Once it’s stirred and warmed, I pour it into a mug, add Reddi-whip if I feel in the mood, and drink up. Amazingly creamy and delicious hot chocolate, in under ten minutes.

Good job, Eva-Joy. For those of us who do not have xylitol, would you know (or have an educated guess) how much THM sweet blend to use?

I would just experiment. Start with a little – taste test – adjust.

after I wrote this – I found my sweetener chart – shows how much of THM sweet blend to use if using x amount of other sweeteners 🙂
