Oddly enough this recipe comes from a dream. I dreamed one night about making cheese crackers. When I woke up I knew I had to try it.

Basically I just took my recipe for whole wheat crackers and added grated cheese to it. I rolled the dough as thin as possible and used a one and a half inch cookie cutter. My family loved them. Most importantly the baby loved them. They were easy and quick so I know I’ll be making them again soon. I’ll have to because my family is going through them way too fast – a good sign.

These crackers would be good with soup. They’re great on their own. They’d make a nice family movie night snack or a car snack. We like to use medium or old cheese. You don’t need as much to get a nice cheesy flavour. Look at the cheesy bits. So tasty.

I used a one and a half inch diameter cookie cutter and was able to get over eight dozen. The amount you will get will vary depending on the thickness of your dough and the size you cut them. I was aiming for something about the size of Ritz crackers – these are a little smaller. The thinner you can roll your dough the crisper the crackers will be. These could also have herbs added to them for extra flavour. That would be especially nice if you were making them for adults and wanted something a little more sophisticated.
